
Wild Turkey Skewers
Ingredients
1/2 cup creamy peanut butter (all-natural)
6 garlic cloves (mixed)
2 tbsp soy sauce
2 tbsp toasted sesame oil
1 tbsp rice vinegar
4 green onions (minced)
1/4 cup fresh cilantro (minced)
2 tsp ground ginger
1 tsp kosher salt
3 lbs boneless skinless turkey breast (cut into 1 inch pieces)
Wood or metal (6-inch) skewers
Crushed red pepper flakes (optional)
Brine Ingredients
1/4 cup minced garlic
Cold water
1/4 cup kosher salt
1/4 cup sugar
2 tbsp peppercorn

Directions
Brine turkey breast for 8 hours in large bowl that covers the entire breasts.
In a large bowl, combine the peanut butter, garlic, soy sauce, sesame oil, white vinegar, half of the green onions, cilantro, ground ginger, and salt.
Add the turkey to the marinade and toss until evenly coated. Let marinate for at least 30 minutes or overnight covered in the refrigerator.
Tightly thread the meat onto skewers, dividing evenly. Place the skewers on Camp Chef Gridiron or grill of choice, until the internal temperature reaches 165° F.
Serve the skewers family-style, garnished with remaining green onions.

Asian Cucumber Salad
Ingredients
1 1/2 pounds cucumbers (about 5 cups sliced)
1/2 tsp salt
4-5 scallions, finely sliced
1 tsp ginger, grated
1 clove garlic, finely minced
1/4 cup rice vinegar
1 tbsp soy sauce
1 tbsp toasted sesame oil
1 tbsp maple syrup more to taste
1 tsp chili garlic sauce (sambal oelek) or sriracha, more to taste
1-2 tbsp toasted sesame seeds
Directions
Score the cucumbers lengthwise with a fork.
Slice the cucumbers. Place in a mixing bowl and toss with the salt. Let this sit for 2-3 minutes.
Add the green onions, ginger, garlic, rice vinegar, soy sauce, sesame oil, maple syrup, optional red chili paste and toasted sesame seeds. Mix to combine.
Taste and adjust salt, spice, and sweetness to your liking. Refrigerate until serving time!
Cucumber salad is best served on the same day but will keep for a few days in an airtight container in the refrigerator.

Soy Glazed Delicata Squash
Ingredients
2 Delicata squash, cut in half, seeds removed
1 tbsp soy sauce
1 tsp maple syrup
1 tsp rice wine vinegar
1 tsp mirin
1 tspn chili paste
1 tsp sesame seeds
Directions
Place on an oiled Camp Chef Gridiron or grill of your choice.
Combine soy sauce, maple syrup, rice wine vinegar, mirin, chili paste into a bowl
Brush glaze on top and sear for 5-7 minutes.
Flip, brush, and sprinkle sesame seeds.
Cook 5-7 more minutes until tender
